Make Tikki (Patty):
- Step 1—Saute Onions: Add oil to a pan. When the oil is hot, add cumin seeds. Once the cumin seeds splutter, add the chopped onions.
2. Step 2—Add Potatoes: Once the onions are sauteed and turn golden brown, add boiled and mashed potatoes, free from lumps. You can also add boiled and mashed peas at this time.
3. Step 3 - Add Spices: Next, add spices, including red chili powder, garam masala powder, chaat masala, and salt. Then add finely chopped cilantro to the potatoes.
4. Step 4 - Mix: Mix all the ingredients until combined properly. Let it sit until the potatoes are no longer hot and at room temperature.
Bread Tikki:
5. Step 5—Make Flour Batter: Mix all-purpose flour and corn flour with water until it resembles pancake batter.
6. Breadcrumbs: Next, add breadcrumbs and salt to another bowl.
7. Step 7 - Dip Tikki in Batter: Take a ball-shaped potato mixture, form it into a ball, and flatten it. Then dip it in all-purpose flour batter.
8. Step 8—Coat: Then, properly coat the Tikki with breadcrumbs. This will help provide the crispy texture.
Frying:
9. Step 9—Fry Tikki: Drop the tikki in hot oil and fry until both sides are golden brown.
