SABUDANA KHEER

If you are craving something sweet & different, Sabudana Kheer is exactly what you need. This is made with Tapioca Pearls, Coconut Milk, and can be served hot or cold.

Indian pudding is always easy to make and texture is always super creamy. So I make different versions of Sabudana Kheer/ Tapioca Pudding by sometimes adding diced mango & papaya along with Tangerine Juice. This sweet & sour flavor of fruits makes this pudding so unique. This is also one of the popular Indian dessert-like Gajrela.

Tapioca Pudding is usually made using milk. But to make it Vegan, I have used Coconut Milk which also helps in giving creamy texture. It is so flavorful & creamy that this dessert does not remain long in the refrigerator. My family loves Tapioca Pudding and I keep experimenting with different fruits of the season.

WHAT IS SABUDANA?

Tapioca Pearls are white pearls produced from tapioca, a starch extracted from Cassava Root. You can easily adapt to their taste even if you're not used to eating them. I like adding them to fruit soups or desserts to add a pearly texture.

Tapioca Pearls are flavorless, so I like cooking them with some flavorful liquid. Here I have used them with coconut milk - for creamy & rich texture. I also like to add some seasonal fruits. That's why I added mango, papaya, and raspberries. You can also experiment with different fruits like passion fruit, pineapple, blueberries, etc.

The best part is you can use Tapioca Pearls in the dessert-like pudding, fruit soups, etc, and can also be used in savory dishes too like Sabudana Khichdi.

TIPS FOR MAKING SABUDANA KHEER

 

  • I have made this dessert Vegan by adding Coconut Milk but you can also add regular milk while making the pudding. Adding Coconut milk gives a rich & creamy texture to the pudding.
  • You can serve this dish Hot or Cold. Either way, it tastes great. I serve it cold during summertime and serve it hot when made fresh.
  • Once tapioca pearls are cooked, fold them with the fruits like mango, Papaya, Passion Fruit, Pineapple, Blueberries, Raspberries, or Peaches.
  • Always add the sweetest fruit to the pudding. I have added the sweetest mango & papaya to the Tapioca Pudding. The sweet flavor of the fresh fruits gives a refreshing flavor to the dish.

HOW TO MAKE SABUDANA KHEER

  1. SOAK SABUDANA: Soak Sabudana Pearls in water for at least 30-40 minutes. After soaking the pearls will increase in size.
  2. ADD INGREDIENTS: Add soaked sabudana, coconut milk, sugar/ honey, and vanilla extract in a pot and close the lid.
  3. PRESSURE COOK: Pressure cooks for 5 minutes and let the pressure release naturally. Or Quick Release after 10 minutes of NPR.
  4. GARNISH: Once pressure is released, open the lid. Let it cook down for some minutes. Then transfer in dessert bowl * garnish with fruits of your choice (like strawberries, mangoes, peaches, etc), or with nuts and serve hot or cold.

Can we eat Sabudana Kheer for fast?

Sabudana is usually consumed during navratri fast and you definitely can have Sabudana kheer during that time. Is it gluten-free & non-allergic so it is recommended to have Sabudana during fast and also it gives you loads of energy & keeps you full for a longer time.

Is Sabudana Kheer healthy?

Sabudana is rich in potassium so helps in maintaining blood pressure. It also has calcium that proves to beneficial for the bones. Tapioca is also gluten-free & nut-free, so people who consume a specific diet will not have any problem consuming it.

Ingredients
  

  • ¼ teaspoon Vanilla Extract
  • ⅓ cup Maple Syrup
  • 1 cup Water (for soaking)
  • ½ cup Tapioca Pearls rinsed
  • 1 can 15 ounce Coconut Milk
  • 1-2 tablespoon Pistachios grated

Instructions
 

SABUDANA KHEER IN INSTANT POT:

  • In a bowl, add Water & Tapioca Pearls and soak for at least 30 minutes.
  • Add Tapioca Pearls, Coconut Milk, Maple Syrup, and Vanilla Extract in the Instant Pot and close lid. Press the pudding setting of the instant pot and set the timer for 5 minutes with the vent in the sealing position. When the timer beeps, let the pressure release naturally or Quick Release after 10 minutes.
  • When pressure is released, open the lid. Transfer in a bowl and let it cool.
  • Divide Tapioca among six different dessert bowls, and add some grated pistachios, almonds on the top.
    (Note: You can garnish with fruits or nuts of your choice).

SABUDANA KHEER ON STOVE-TOP:

  • In a bowl, add Water & Tapioca Pearls and soak for at least 30 minutes.
  • Add Tapioca pearls, Coconut Milk, Maple Syrup, and Vanilla Extract in a saucepan and bring it to boil. Reduce the heat to low and simmer for 10 minutes. or until tapioca pearls are tender and translucent. Remove from heat and let it cool.
  • Divide Tapioca among six different dessert bowls, and add some grated pistachios, almonds on the top.
    (Note: You can garnish with fruits or nuts of your choice).

Notes

You can use any Milk in the recipe. For making the dish Vegan, I have used Coconut Milk in it.
Pressure cook for 5 minutes, and then Quick release after 10-15 minutes. Tapioca Pearls should be cooked properly (pearls should be mashed properly when pressed between two fingers).
You can add any seasonal fruit in the recipe like passion fruit, peaches, mangoes, pineapple, papaya, pomegranate seeds, etc.
You can add Sugar or Agave Syrup or Honey or Maple Syrup.
Just after pressure cooking, there will be lot of liquid in the Instant pot. But once it cools down, then the pudding will be thick & creamy.
