Make this Super Easy vegan crepe using easily available ingredients from your pantry. These crepes can be used as a sweet treat or stuffed with a savory filling of your choice.
Earlier I was intrigued by crepes. I thought making a crepe is a thing for the experts only. But when I tried, I found making crepes is not that fancy at all. Being an Indian, I already have an experience of how to make dosa or Indian flatbread. So, making crepe was not that hard for me.
When we lived in New York, visiting the Union Market was our daily task. We enjoyed the food variety found there and one day we thought of trying crepes. The guy serving the crepes was an expert. He was making these marvelous crepes with hardly any effort. I can still taste the flavors of that crepe. We ordered sweet & savory both and couldn't decide which one was better. When I decided to make crepes at home, I was worried that I would make a mess of it. But thankfully, making delicious crepes is easy!
TIPS TO REMEMBER FOR MAKING VEGAN CREPES
- The batter should be of the right consistency, neither too thick and nor too liquid. If it's not spreading properly, then add some water. If it's too liquid, you can whisk some more flour in the batter.
- Once the batter is made and if you have time then I would recommend refrigerating the batter. Though this step is not necessary, it does make the difference in the crepes.
- Don't heat the pan at high heat. You just need the crepes to be light golden color & soft in texture and not burnt.
- Use a non-stick pan for making crepes. Don't make in the cast-iron pan as it makes the crepes stick.

Yes, you definitely can. I usually make a few extra crepes that I can use later when in a hurry. Sometimes I store them in the refrigerator. They stay good for 3-5 days. But if I want to store the crepes for a longer time, I prefer storing them in the freezer. You can keep them in the freezer for 1-2 months. before re-using, I prefer to thaw them in the refrigerator overnight. Before serving, I heat them in the pan until they are warm.
