Achari Paneer is yet again another paneer recipe that is spicy, tangy, and full of flavors. Just like Kadai Paneer, Achari Paneer is also made by using a special spice-mix (Achari masala). It is made by adding special Achari Masala with tomatoes, ginger, green chili, yogurt. cream, and paneer.

Ingredients
  

Achaari Masala (Spice Mix)

Instructions
 

  • Take a skillet and dry roast Fenugreek Seeds, Mustard Seeds, Fennel Seeds, Coriander Seeds, Whole Red Chili, and Cumin Seeds for 1-2 minutes until aromatic. When they cool down, put them in the spice grinder and coarse grind the mixture.
  • Add tomatoes, ginger and green chilies in a blender and grind them into a fine paste.

Achaari Paneer Gravy

  • Add oil to the pan. When the oil is hot, add Tomato-Ginger paste to it. Cook it for 3-5 minutes or until oil starts to separate.
  • Add Achari Masala, Red Chili Powder, Garam Masala, Turmeric Powder, and Asoefitida and saute for 1-2 minutes.
  • When everything is cooked, add water and salt. Cook for 2-3 minutes. Then add cream/yogurt.
  • When it comes to desired consistency, add paneer cubes with Kasuri Methi. Cook for 1-2 minutes and garnish with some chopped cilantro & serve!

TIPS
  • Dry roast the spices first, before grinding them. This will make the spice mix more aromatic. You can make the spice mix in big quantities and store it in an air-tight container.
  • For more tangy flavor, add either diced (canned) tomatoes or cherry tomatoes.
  • No need to add onions & garlic. This Achari Paneer is made without onion and garlic.
  • Adjust the spice level as per your taste. Achari Paneer's masala already has a bold taste, so when you add green chilies just keep that in mind.
  • To lighten the flavor, add cream or milk; this will make the recipe creamier and also balances the flavor. 
  • Cook the masala in mustard oil. This will bring a smoky flavor to the curry.
  • Always use Homemade Achari Masala for the recipe.
