Boiled and mashed potatoes are made into cylinder- shaped cutlets and then fried. These fried potato cylinders are wrapped in a roll with some green chutney and veggies.

  • Peel the potatoes and mash them using potato masher or fork. Now add all the spices (red chili powder, garam masala powder, cumin powder, mango powder, anardana powder and salt). Mix spices and mashed potatoes together. Take small amount of potatoes in hand and roll them in the shape of a cylinder.
  • Take oil in a pan and shallow-fry the potato cylinders. Takes about 3-4 minutes to fry each side. Once done, take them out and put them over a paper towel to remove excess oil from them.
  • Take roti and heat it up after adding a little bit of oil over it.
  • Lay the roti flat on plate or cutting board, Spread the Garlic Spread over it.
  • Mix green chutney with sliced onions. Put this sliced onion on one side of roti. Add potato cylinders over it.
  • Spread a few veggies over potato. Lastly, drizzle some Siracha Mayonnaise over it.
  • Wrap everything in a roll like a burrito and enjoy.

Notes

  • Potatoes must be fully boiled. Partial boiled ones won't mash properly.
  • Need to wrap roll like a burrito with all the filling inside. Add only a little quantity of everything, so it's easier to roll.
  • You can use roti/parantha or even a tortilla to make a roll.
  • I have used both Garlic Sauce and Sriracha Mayonnaise of Trader Joe's. You can even use regular mayonnaise if you like.
  • Making roll takes a lot of time, plan ahead.
