Jalapeno guacamole is a spicy avocado-based dip that can be used as a spread on toast. Or as an add-on in sandwiches & wrap. It also works as a great accompaniment with some crackers or veggies.

Ingredients
  

  • ½ small Onion chopped
  • ½ cup Cherry Tomatoes chopped
  • ½ Lemon Juice
  • ½ teaspoon Garlic Powder
  • 1 Jalapeno de-seeded & chopped
  • Salt
  • 1 tablespoon Cilantro chopped
  • 2 Avocado

Instructions
 

  • In a big bowl or in a mortar pestle, add chopped onions, tomatoes, cilantro, and jalapenos. Lightly mash the ingredients to spread the flavors evenly.
  • Cut the avocado from the middle. Twist and pull the sides apart. Carefully remove the seeds using a knife. Using a spoon take out the avocado. Chop the avocado and add it to the bowl.
  • Add lemon juice, salt, garlic powder, cilantro, jalapeno, and peppercorns and mash it until chunky. Serve the prepared guacamole as a spread or as a dip.

STORAGE

You can make Jalapeno guacamole ahead of time. Just make sure to add lots of lemon juice. Place a plastic wrap directly over the guacamole and remove the air out. This will prevent it from getting brown and remain green & bright.
When you want to consume, remove the plastic wrap and serve it as needed.
CAN YOU MAKE GUACAMOLE USING FROZEN OR UNRIPE AVOCADOS?
FROZEN AVOCADOS: Just like fresh avocados, frozen avocados are also great to use in guacamole. You can also use them in making dip, dressing, smoothies, etc. Just make sure to puree the avocados and freeze them in an ice tray. Before freezing spray lemon juice to avoid oxidation.
UNRIPE AVOCADOS: It is safe to use unripe avocado in the recipe. Just the only difference is unripe avocados don't taste that good.
CAN YOU FREEZE JALAPENO GUACAMOLE?
Yes, you can freeze homemade jalapeno guacamole. Put the prepared guacamole in the ice tray. Spray lots of lemon juice & line them with plastic wrap by removing the air out. Freeze the guacamole. Once frozen, store them in freezer-safe bags.
HOW DO YOU KEEP JALAPENO GUACAMOLE FROM BROWING?
In order to save the guacamole: Just make sure to add lots of lemon juice. Place a plastic wrap directly over the guacamole and remove the air out. This will prevent it from getting brown and remain green & bright. Also, you can sprinkle some water (a generous layer of water on top of the guacamole).
