BAKED OATS RECIPE WITH BLUEBERRIES

If you're bored with old regular oats, then do try this Baked Oats Recipe. It is made with oats, maple syrup, and blueberries. This gives a nice twist to the boring breakfast. You can serve it with some milk or fruits or drizzle some maple syrup or chocolate syrup.

Ingredients
  

  • 2 cups Old-Fashioned Oats or rolled oats or quick oats
  • 1 Egg or Flax Eggs
  • ½ cup Yogurt
  • 1 cup Milk or Vegan Milk
  • 1 tablespoon Cinnamon
  • 1 teaspoon Baking Powder
  • ½ teaspoon Vanilla Extract
  • 3-4 tablespoon Maple Syrup or Honey
  • ½ teaspoon Salt
  • 1 cup Blueberries

HOW TO MAKE THE BATTER

  • Method 1 : Toss all the ingredients, including oats, eggs, bananas, cinnamon, yogurt, milk, maple syrup, vanilla extract, and baking powder in a blender. Blend until smooth, and it has a batter-type consistency.
    Method 2: Mash banana in a bowl. Add all the dry ingredients in a bowl including oats, baking powder, salt, cinnamon, and nuts. Stir and then add all the wet ingredients including milk, yogurt, eggs, vanilla extract, and maple syrup. Mix all the ingredients until well combined.

HOW TO MAKE THE BATTER VEGAN

  • First make the Flax Eggs. Add 1tsp of flax meal with 3 tablespoon of water in a bowl. Mix it until it is free of any lumps. Let it sit for 5 minutes before adding it in the batter.
  • Method 1: Toss all the ingredients, including oats, flax eggs, bananas, cinnamon, maple syrup, yogurt, vanilla extract, baking powder, and vegan milk, in a blender. Blend until smooth, and it has a batter-type consistency.

ADD BATTER TO THE BAKING PANS

  • Let the batter sit for 5-10 minutes. That will result in soft & fluffy oat cake. Add flavoring as per your taste like blueberries, mixed fruits, nuts, chocolate chips, etc.
  • Grease the pans and transfer the batter to a baking dish or in ramekins. You can top it with some mixed berries, chocolate, and nuts.

HOW TO MAKE IN THE OVEN

  • Preheat the oven at 350 for 15-20 minutes. Once the oven is preheated, bake it for 20-25 minutes or until the toothpick inserted comes out clean.

HOW TO MAKE IN AN INSTANT POT

  • Add the mixture to the cake pan/ bundt pan or ramekins/ silicone molds. Add water to the Instant Pot and press Saute. Insert trivet in the Instant Pot.
  • When water is hot, transfer the cake pans or ramekin to the Instant Pot. Close lid and pressure cook with the vent in the sealing position— For Cake Pan, pressure cook for 25 minutes, and Ramekins for 15 minutes. Garnish baked oatmeal cups with some berries and nuts.
  • When the timer beeps, turn the vent to the venting position and do a quick release.

Notes

You can add any nut butter, chocolate in the batter for a healthier recipe. you can also top it with chia needs and some chopped nuts too. 
You can use a high-speed blender like Vitamix to make oats flour for the recipe. 
Steel cuts oats don't go so well in the recipe; they don't blend in the baked oatmeal recipe well.
You can also add different flavors in the recipe like nut butter, chocolate, or fruits like peaches, mangoes, etc instead f blueberries. 
You can also use the same batter to make cupcakes or even pancakes and waffles. Tastes amazing either way.
