In a big bowl, whisk all the dry ingredients including all-purpose flour, salt, and cornstarch. Then add oil, vegan milk, water, and whisk together until the batter is smooth and has a medium consistency.
Heat a medium-sized non-stick pan at medium-low heat. When the pan is hot, add a tablespoon of vegan butter/oil. Once the butter is melted then pour ⅓ cup of batter. Immediately rotate the pan in circles until the batter is spread out evenly.
Cook for 1-2 minutes until the top of the crepe seems dry. Then using a spatula, flip the crepe and cook another side for 30-40 minutes. Repeat the process for the rest of the crepes.
Add your favorite flavoring and roll the crepes and serve.
