Cilantro Chimichurri Sauce is fresh, delicious, tangy, and bursting with flavors of Cilantro, garlic, oregano, and olive oil. It is a perfect condiment and pairs perfectly with grilled veggies like cauliflower or homemade bread.
Chimichurri Sauce is usually made with parley or a mix of Cilantro and parsley. But to make it extra flavorful, I have made it with just cilantro leaves. Being Indian, Cilantro is one of the most popular herbs that I use in cooking. So I thought why not make it just with Cilantro.
it pairs perfectly with grilled veggies like cauliflower steaks, or homemade bread. I especially love it with smashed potatoes. Sometimes use it to make Chimichurri Rice or use it as a spread din sandwiches.

WHAT IS CILANTRO CHIMICHURRI SAUCE?
Chimichurri Sauce belongs to Argentina cuisine. it is made by blending parsley, with oregano, garlic, shallots, chili flakes, and olive oil. You can make it in many different ways, but my favorite is using Cilantro.
This is not an authentic recipe for chimichurri sauce, but it tastes incredible. If you're someone who likes Cilantro then do give this recipe a try. it is easy, tangy, fresh, and it can be made in under 5 minutes.
You can make it fresh or make it ahead of time to make the flavors blend more nicely. It tastes great as a dipping sauce or over some grilled steaks or veggies. You can also use it as a spread in sandwiches. It is one of the versatile sauces that pairs perfectly with almost anything.
INGREDIENTS
- Garlic: I always try to add fresh ingredients. So I try to add 3-4 fresh Garlic Cloves. This gives a strong taste which you won't get from the packaged ones.
- Oregano: You can use fresh as well as dried oregano in the recipe.
- Olive Oil: Another main ingredient is Olive Oil. I add Extra Virgin Olive Oil. You can add the Oil which you think will taste good to you. It's better if the oil has a bold flavor.
- Cilantro: I add Cilantro to the sauce, as it gives nice color and also flavor. All Indian & Mexican recipes have Cilantro in them. It elevates the flavor of the recipe.
- Red Wine Vinegar: I usually prefer adding Red Wine Vinegar but you can also add Lemon Juice to the recipe too.
- Shallots: You can add Shallots or even red Onions to it.
- Red Chili Flakes: To add some heat to the recipe, it's good to add red chili flakes to the recipe. You can also replace them with Jalapenos.

HOW TO MAKE CILANTRO CHIMICHURRI SAUCE

Roughly chop the ingredients including red onions (or shallots), garlic, and Cilantro. And add them to the food processor.
Close the lid and blend it until finely chopped.
Add salt and pepper, red wine vinegar, and olive oil. Stir the ingredients until well combined. Store it in an air-tight container and enjoy!
VARIATIONS
- Tangy: for more tangy flavor add lemon juice along with red wine vinegar.
- Spicy: For a more spicy flavor, add chopped jalapenos along with red chili flakes.
- Authentic: For more authentic flavor, add parsley with oregano and cut back Cilantro.
TOP TIPS
- To avoid big pieces of garlic and onion in the sauce, add chopped onions and garlic.
- Store the sauce in air-tight container.
- Add a big layer of olive oil to maintain the fresh flavor of sauce when storing int he refrigerator.
- Also add olive oil after pulsing onions, cilantro, and garlic.
WHAT CAN YOU USE CILANTRO CHIMICHURRI SAUCE ON?
- Serve it with some Grilled Cauliflower Steaks or regular steaks.
- Use it as a dipping sauce with some roasted potatoes.
- Mix it with some veggies like brussel sprouts or asparagus or extra flavor.
- Serve it with some homemade crusty bread like French bouquette.
- Make Chimichurri Baked potatoes in the the oven or in the air fryer.
- Use it a spread in a sandwich.

Cilantro Chimichurri Sauce is made with fresh ingredients, so it is best to store it in the refrigerator.
You can refrigerate for 10-15 days. When using just stir the sauce nad use as needed,
You can freeze in an ice tray. And once frozen, take them out and store them in Ziplocs. When you need it, just take out cubes of it and use it in the recipe as required.
Like any other sauces or chutney, if you take in moderation then it would be healthy but if you consume in higher quantity then it won't be healthy at all. This is filled with all the healthy ingredients like Parsley, Cilantro, Oregano, Garlic, and used Olive oil as a base ingredient.
This cialntro chimichurri sauce is not spicy. But to make it spicy you can add some chopped jalapenos.
you can serve cilantro chimichurri sauce hot as well as cold. You can mix it with veggies and then roast them. or use it as a dipping sauce or a spread din the sandwich. Eitherway it will tastes good.
