I love the flavor of Gochujang Sauce & I like adding it to my recipes. So this corn rib recipe with gochujang paste is hit at my place. They have an amazing spicy flavor with the sweetness of corn kernels.
Corn Ribs are basically strips of corn on the cob. First, the corn is cut into four equal-sized strips from top to bottom. Then these corn strips are flavored with some spices, which are later grilled or air-fried. You can grill them in the oven or air fry them until a little crispy from the edges.
They are easy, delicious, and full of flavors. You can add spice-mix with some butter or add a paste-like gochujang paste that I have used in the recipe. Either way, they will turn out great, and this is a great Summer recipe.
INGREDIENTS YOU'LL NEED
- CORNS: For the recipe of air fryer corn kernel, you'll need fresh corn on the cob. You can also use the frozen corns. But defrost the corns first before brushing the paste when using frozen corns.
- GOCHUJANG PASTE: I have made Gochujang Paste by whisking gochujang sauce, brown sugar, and soy sauce in a bowl. Adding brown sugar with gochujang sauce, balances the flavor.
- OIL/BUTTER: Before air frying, just spray some olive oil or butter for a nice outer texture of the corns.
LET'S MAKE IT
How to Cut the Corns
So I have tried different approaches to cut the corn in ribs properly. But sometimes the ribs are too thin, or sometimes most of the corn kernels but fell from the cob. So here is the way that works best for me.
Take a sharp knife and watch out for your fingers. It may get messy. So if you are not pro in cutting, then please do not try this.
Put the corn down on the cutting board and cut the top & bottom of the corn. Then cut the corn from the middle lying flat on the cutting board.
Take one-half of the corn and place it vertically. Make sure that the corn can stand firmly. (If not, then level the edges properly). Place the knife on the top of the corn. Apply little pressure on the knife from another hand, and slide the knife to the bottom. This will cut the corn in half. (Do not place your fingers on the corn when sliding, be careful when slicing or cutting the corn).
Next, place the corns flat on the cutting board. And slice them from the middle with the knife.
How to Make Gochujang Paste
Add Gochujang Sauce, Brown Sugar, Soy Sauce, and Vinegar in a bowl. Whisk until ingredients are properly combined, and it forms like a paste. The paste should not be too dry or too watery; instead, it should be of the right consistency.
If the paste is too dry, you can add a little more soy sauce and vinegar. You can adjust the flavors as per your taste.
Brushing
Using a pastry brush, brush the Gochujang Paste all over the corn kernels. Repeat the process for all the corn ribs. Next, spray some oil or butter on the corns and keep them aside.
How to Cook
Preheat the air fryer for 3-5 minutes at 400 degrees. Once preheated, place the corn ribs in the air fryer basket. (Do not overcrowd the air fryer basket).
Air fry for 10 minutes at 400 degrees until golden and crispy from the edges. Repeat the process for the rest of the ribs. When air frying again, reduce the time a little and keep checking in between to avoid overcooking.
Serve
Remove the corn ribs from the air fryer basket. And serve with some lemon and garnish with some cilantro and scallions.
COMMONLY ASKED QUESTIONS
Gochujang Corn Ribs are full of flavors. So you don't really need anything else to go with them. But still, you can pair corn ribs with Ranch or Vegan Ranch. They also go great with some flavored aioli.
Corn ribs are usually healthy if you don't apply butter or oil to them. Without oil or butter also corn ribs will turn out amazing.
You can make spice-mix and rub that on the ribs. For example, you can mix garam masala powder, cumin powder, red chili powder, and salt & mix them properly. Next, spray some oil or butter on the corn and generously rub this spice mix. Then cook them as needed.
Preheat oven at 375 degrees or for at least 10-15 minutes. Place the corn ribs on the baking sheet. Apply the spice mix or the paste. Leave a little space between two corns for even cooking. Bake the corns in the preheated oven for 25-30 minutes. Once cooked, the corn ribs will turn curly. You can also increase the time for more crispy corn ribs.
